砵仔糕 Put Chai Ko

This is a traditional Cantonese dessert, it’s usually filled with red beans or green beans and comes in various kinds of flavors. The one I made is the most basic one, just rice flour and rock candy.

Ingredients

  • 85g 粘米粉 Rice Flour
  • 55g 澄面 Wheat Starch
  • 110g 冰糖 Rock Candy
  • 2 cups 水 Water

Directions

  1. 先用 1/2杯水把粘米粉和澄麵混合成粉漿。Use half a cup of water to mix the rice flour and wheat starch. PIC_20140506_163117_F1D
  2. 用 1 1/2杯水煮溶黃糖。把煮滾的糖水倒入粉漿中,快手拌勻,切勿有粉粒或沉底。Use one and a half cups of water to melt the rock candy. Pour the boiling mixture into the flour mixture and mix them quickly so there are no lumps. PIC_20140506_163207_2FB
  3. 分批倒糖水粉漿入模內,隔水蒸10分鐘。可於入鍋前,或中途加入紅豆在糕面上。如果用飯碗,則蒸20分鐘。Pour into small cups and steam for 10 minutes. You may add cooked soft red beans before or during the this step. If you use a large bowl to steam, then steam for 20 minutes. PIC_20140506_165210_38A
  4. 蒸熟了之后可以用牙签把糕挑出来. Once they are done, you can remove them from the cups using a chopstick and scraping the sides. PIC_20140506_180815_583
