After making delicious blueberry muffin with the giant blueberries from the farm, I realized it wasn’t enough. So I’ve gone back to the same farm and brought back another bucket, haha. This time I am making blueberry tart and it is the first time I’ve made a fruit tart. I actually messed up and made my tart a bit too thick, but the blueberry filling by itself was just heavenly.
This recipe yields six 4 inch blueberry tarts.这个食谱可以做六个4寸蓝莓果塔.
- 1 and 1/4 cup of all purpose flour 面粉
- 1/3 cup of sugar 糖
- 1/4 tsp of salt 盐
- 8 tbsp of cold unsalted butter 牛油
- Preheat oven to 375 degrees. mix flour, sugar, salt, and butter in a large bowl until large moist crumbs form. 预热烤箱到375度. 把面粉, 糖, 盐, 和牛油混合在一个大碗里面.
- Spoon dough into individual 4 inch tart pans. Press the dough into the tart pan and up the sides until firmly packed. Try not to make it too thick as it does rise up a little. 用勺子把生面团放到塔盘里面. 用手把面团按平和按到边上. 饼底不要弄太厚.
- Freeze the dough for about 10 minutes. 放到冷藏里面10分钟.
- Prick the bottom of the dough with a fork all over. 用叉子在面团上面捅几个下.
- Bake for 10-12 minutes. 放到烤箱里烤10到12分钟.
- 3 cups of fresh blueberries, rinced and dried 蓝莓
- 2 tbsp of corn starch 生粉
- 2 tsp of finely grated lemon zest 柠檬皮
- 2 tbsp of fresh lemon juice 柠檬汁
- 1/3 cup of sugar 糖
- pinch of salt 盐
- Bring 1/4 cup of water and 1 cup blueberries to a boil over high heat. Reduce heat and simmer. Stir occasionally, until blueberries break down slightly (3-4 minutes). 把1/4 cup的水和1 cup的蓝莓煮滚. 然后降温再慢煮. 经常搅动一下, 煮到蓝莓开始烂, 大概是3到4分钟.
- In a small bowl, mix corn starch with 2 tbsp of water. Stir into the blueberry mixture. 用一个小碗, 把生粉和2 tbsp的水混合在一起, 加到蓝莓酱里.
- Add lemon zest and juice, sugar, and salt to the blueberry mixture. Bring it to a boil, and then reduce heat. Simmer and stir for 30 to 60 seconds, or until the mixture starts to thicken. 把柠檬皮和汁, 糖, 盐都加到蓝莓酱里. 煮滚, 再降温. 一直搅动, 继续慢煮30到60秒或者到酱变浓.
- Remove from heat and stir in remaining blueberries. Immediately pour hot blueberry mixture into cooled tart shell. 把剩下的蓝莓都加到酱里面混合, 然后立刻把酱倒到饼底上.
