桂圆枸杞桂花糕 Osmanthus Jelly

This is one of my favourite desserts to make because it’s so easy and so delicious. 我最喜欢做的一个甜品, 很漂亮, 简单, 而且又好吃.

This recipes makes about 14 pieces. The Longan can also be replaced by canned lychee. The osmanthus can also be replaced by chrysanthemum. 大概做14个桂花糕, 如果没有龙眼和桂圆, 可以用荔枝代替. 没有桂花也可以用菊花.

You can add osmanthus into the jelly directly, although I don’t like the look of the jelly afterwards and so I usually use the tea instead. 你可以直接放桂花, 但是因为我感觉放了桂花不好看, 所以我是用桂花茶的.

Ingredients

  • 12 Dried Longan 桂圆 / Fresh Longan 罐头龙眼
  • 30 Goji (Wolfberry) 枸杞子
  • 24g Gelatin Powder 鱼胶粉
  • 60g Rock Sugar 冰糖
  • 200ml Osmanthus Flower Tea 桂花茶

Directions

  1. Wash the dried longan and goji with water, and place them in water for about an hour. Tear the soften longan into thirds. When it’s soft, remove from water. 把桂圆和枸杞子用水洗干净, 然后泡水大概一个小时. 把桂圆撕开大概三分之一. 变软了以后可以拿出来, 把水倒掉. IMG_20140719_234628
  2. Add a small amount of cold water into the gelatin powder to allow it dissolve, add enough until all the powder has been saturated. 加点冷水到鱼胶粉里混合, 这样会更加容易溶化.IMG_20140719_234802
  3. Boil water to make osmanthus tea, just add a small amount of osmanthus. Add rock sugar and allow it to dissolve. 把水煮滚哪来泡桂花茶, 加少量的桂花就够的了, 用来煮溶冰糖.
  4. Add the soften longan and goji into the sweetened tea, and simmer for about 10 minutes. 加桂圆和枸杞子到桂花茶里, 慢火煮10分钟. IMG_20140719_235636
  5. Add the gelatin mixture and stir until fully dissolved. Pour the mixture into molds. 加鱼胶粉, 等全部都溶化, 倒到模具里. IMG_20140720_000518
  6. Refrigerate for 4 hours, remove the jelly from the molds. 放到冰箱里面4个小时, 从模具里面拿出来.

Notes: To take the jelly out of the molds, I usually use a toothpick to scrape the sides and then take it out with a small spoon. 从模具里面拿出来的时候, 我通常是用牙签在边上转一圈, 然后用勺子拿出来.

Notes: Cheap dried longan will make the jelly brown instead of a light golden colour. If you can’t get nice dried longan then used canned ones instead. 便宜的桂圆做出来的会变咖啡色的, 如果没有好的桂圆就用罐头龙眼.
